Ingredients

  1. 1 1/2 cupbutter
  2. 1 cupgranulated sugar
  3. 2 cupbrown sugar-packed
  4. 1 tspvanilla extract
  5. 4 cupall-purpose flour
  6. 2 tspbaking soda
  7. 1 tspsalt
  8. 1 1/2 tspground cinnamon
  9. 1 3/4 cupcanned pumpkin
  10. 1 cupchocolate chips
  11. 2 cupquick-cooking oats( uncooked)
  12. 2eggs

  1. 1

    Preheat oven to 350°. Get your cookie sheets greased. I used parchment paper. Easier clean up..

  2. 2

    Beat butter & sugars in large mixing bowl until well blended. Add eggs & vanilla; beat until fluffy.

  3. 3

    Sift together flour, baking soda, salt & cinnamon in a separate bowl.

  4. 4

    Add to egg mixture alternating with pumpkin. Stir in chocolate chips & oats.

  5. 5

    Drop by teaspoonfuls onto prepared cookie sheet.(I used a #40 scoop).

  6. 6

    Bake 8 to 10 minutes. Makes 10 dozen. ( Mine were a little bigger I got 54 & baked them for 15 min.)
