Steps
- 1
Preheat oven to 400°F.
- 2
In a large bowl, sift together flour, baking soda, sugar, and 1/8 teaspoon salt.
- 3
Using pastry blender, cut in butter until it is in pea-sized lumps.
- 4
Stir in the currants or raisins.
- 5
Mix together 1/2 cup milk and sour cream.
- 6
Pour all at once into the dry ingredients and stir gently until well blended. Do not overwork the dough.
- 7
With floured hands, pat dough into 2 to 3 inch rounds (as the dough is very sticky, you may also drop dough onto greased baking sheet or stone). Flatten slightly.
- 8
Whisk together egg and remaining milk. Brush the tops of the scones with the egg wash. Let rest for 10 minutes.
- 9
Bake for 10 to 15 minutes in preheated oven until tops are a light golden brown.
- 10
Serve plain or with butter or clotted cream and a selection of jams.
