Ingredients

  • 2 tbspVegetable oil
  • 1ripe Plantain
  • to tasteSalt
  • 1large Eggs
  • 1Fresh tomatoes
  • 1/2onion
  • 1fresh pepper
  • 5Irish potato

Steps

  1. 1

    Wash and cut fresh tomatoes, onion and pepper. Break eggs in bowl and whisk.

  2. 2

    Add salt. Place a dry pan on heat add vegetable oil onces is hot add onion.

  3. 3

    Stir after 20seconds pour in the fresh tomatoes and pepper. Fry for 1minute then pour in the egg. Fry and stir at intervals and scramble till it's done.

  4. 4

    Peel and slice plantain and irish potato,sprinkle salt on it. Fry in a hot vegetable oil for 3minutes.
