Wash plantain and peel, slice to desire shape and sprinkle salt, heat up frying pan and add veg oil once it's hot start frying plantain till it's fried both side, remove and drain in a paper towel

In a small bowl, break egg and whisk then set aside.

Remove the oil from the frying pan and place the frying pan back on heat, add the left over stew after a minutes add eggs and scrambled everything together

Once the egg is cooked, remove from heat and serve with fried plantain
