At home, we always eat whole wheat bread. I had a hard time finding whole wheat spelt bread—most of what I found wasn’t whole wheat, so we decided to buy a bread maker and make our own bread. It lasts us about 4 days (I’m not sure if it would last longer, because we eat it before then).

Measure the salt, yeast, and psyllium using the small side of the bread maker’s measuring spoon.

Pour the water into the bread pan, then add the olive oil, yeast, flour, and psyllium (pre-mixed), and finally the salt.

Select program 3, 1000 g weight, and quick mode.

When the machine beeps 10 times in a row, you can add seeds or nuts if you like.

When there is 1 hour and 5 minutes left, remove the kneading paddles and shape the dough in the bread pan. When finished, remove the bread and place it on a wire rack to cool and release moisture. To store it better, keep it in a cloth bag.

Sometimes I make it with a mix of flours (3 1/3 cups whole wheat spelt flour and 2/3 cup whole wheat flour—about 400 g spelt and 100 g wheat), and other times with all spelt. Adjust to your taste.

I recommend buying granulated yeast from a bakery. I’ve tried several packet and fresh yeasts, but the bread would sink. I’ve found that the key is in the yeast.
