Margaret's Wild Rice With Bacon Casserole

Ingredients

6 servings
  1. 1 1/2 cupwild rice
  2. 6to 8 slices bacon
  3. 1onion, chopped
  4. 1/4 tsppepper (or to taste)
  5. 1 cupcream
  6. 1/2 cupshredded carrots
  7. 2egg yolks, beaten
  8. 1salt to taste

Cooking Instructions

  1. 1

    Wash rice in cold water.

  2. 2

    Cook in boiling water for 30 minutes or until tender.

  3. 3

    Fry bacon and onion until brown.

  4. 4

    Add salt, pepper, egg yolks, cream and carrots to bacon and onion.

  5. 5

    Add this mixture to the rice and place in a greased baking dish.

  6. 6

    Dot with butter.

  7. 7

    Cover and bake at 375° for 1 hour.
