I used my crockpot to cook this. I put the 2 tbs of curry paste, 2 cans of coconut milk, onion, both bags of veggies, and 1/2 tsp of chilli flakes to start. Set the crockpot to low for 4 to 5 hours stir occasionally. I did add a bit more curry paste and chillies to taste.

Serve with rice and naan. Enjoy!
