This recipe was invented in the RDC healthy eating class with Chef Black and it’s the only healthy thing I’ll ever eat!
Steps

Wash, peel and chop Irish potatoes
- 2
Boil water, garlic, onions, mixed herbs and salt in a cooking pot to build your aromatics

Put in peeled potatoes and leave to boil for 15-20 minutes or until ready.

Wash and clean your chicken and marinate with mixed herbs, chopped garlic, chopped onions, black pepper and little salt. Leave to sit for 15-30 minutes

Heat a non stick skillet pan on the stove and add little olive oil and sauté the chopped marinated chicken until cooked.

Chop sweet peppers and cover up to use as garnish
- 7
Remove potatoes from the stove and drain water, let cool and put in your serving disg

Mix cooked potatoes, chicken and mayonnaise and garnish with sweet peppers
