I needed to cook something simple and quick that wouldn't take to long to make.
Steps

Boil the water in a cooking pan and add salt to taste.

Add tge rice and cook till ready.

Chop the onion and tomato finely and the clean the coriander and chop it up also.

Crack the eggs in a bowl. Add salt and black pepper and whisk.

Heat oil in a pan and fry the onion. Add the tomato and coriander and stir till a nice paste.

Add the egg mix and allow it to settle.

Using a spatula start to flip the eggs around the pan.

Do this till done.. Serve.
