1 3/4 cupCooked & smashed pumpkin
1 cupVegetable oil
2 cupFlour
1 tspCinnamon
2 tspBaking powder
1 tspBaking soda
1/2 tspGround ginger
1/2 tspGround nutmeg
1/2 tspSalt
1/2 packagesCream cheese
1/4 cupSoftened butter
1 tspVanilla
2 cupPowdered sugar

Preheat oven to 350

Beat eggs, add pumpkin, sugar and oil

Add remaining ingredients except powdered sugar, butter,cream cheese and vanilla (beat well)

Fill cupcake liners about 3/4 full

Bake for 20 mins

For cream cheese frost:

Mix cream cheese, powdered sugar, butter and vanilla. Beat until fluffy

Allow cupcakes to cool before frosting
