Jollof rice with spring onion and chicken

Boil the chicken with:maggi cubes,salt,onion,curry,thyme

Boil rice for 10mins,drain the water and wash.

Slice the onion and fresh tomatoes,grate the ginger and garlic.

Put the pot on heat,add groundnut oil,when is hot after 40seconds.

Pour in the onion,ginger,garlic and cut open the tomatoe puree and fry for 3mins keep stirring.

Pour in the chicken stock and more water and boil it for 3mins.

Add curry,salt,maggi cubes, and pour in the parboiled rice

Stir very well and cover to boil.

Cut and wash the spring onion.
- 10
When is almost done pour in the spring onion and lower the heat.boil for 2mins then stir.
