I made this meal in under 30 mins and it went down so well with my guests....ps they MUST be garlic lovers. :chef

Place fish on flat oven proof dish. Rub melted garlic and butter mixture into fish, coating both sides.

Sprinkle garlic and herb seasoning onto both sides of fish.

Put under grill (relatively close to element but not too close) and grill for 8 - 10 mins.

Transfer fillets to a clean oven dish whilst reserving juices. Sprinkle fresh lemon juice onto fillets.

Add the tablespoon of white wine to reserved juice, stir in and pour 3 - 4 tbs over fish.

Put fish back into oven at 200° Celsius for another 5-8 mins.

Serve on a bed of basmati rice, accompanied by steamed veggies and topped with a grilled slice of Haloumi cheese.

Enjoy with a glass of Chenin.
