Vietnamese Fried Banana (Bánh Chuối Chiên)

Peel the bananas, cut them in half, and flatten them gently.

Mix the all-purpose flour, rice flour, a pinch of salt, and 1 tablespoon sugar with water (or coconut milk/soy milk) until you get a thick batter. Add a little lemon juice to help keep the fritters crispy. Let the batter rest for 15 minutes, then coat the bananas in the batter.

Heat vegetable oil in a pan. Fry the coated bananas until golden brown. For larger fritters, dip the bananas in the batter a second time and fry again. Remove and drain on paper towels. Serve hot for best taste.
