This is a high calorie, heavy on the stomach snack from Kerala. Recipe is simple and the ingredients are commonly available.

Melt the jaggery in half cup water. Strain if there are impurities.

Mash the bananas. It is better to start with three.

Mix the wheat flour, ginger powder, cardamom powder, baking soda and salt. Skip the salt if the jaggery is salted.

Add the mashed bananas and melted jaggery to the above mixture.

Make a sticky dough by adding a little water. You can mash and add the 4th banana, if needed, at this stage. No need to knead much.

Cover the dough with a wet cloth and keep aside for 30 minutes.

Knead the dough for 2 minutes. It will still be sticky.

Divide into fist size balls.

Fry in hot oil, in a medium flame, so that it is cooked well from inside. When cooked, the undampori will turn brown.

Drain the excess oil on paper towel. Undampori is ready to serve.

Note: Crushed cardamom, with the peel, can be used instead of powder.
