5russet potatoes, washed & diced in bite-size pieces
1olive oil
1italian seasoning
1salt & pepper

Drizzle diced potatoes with olive oil and sprinkle with italian seasoning.

Roast in 400° oven for 15 minutes or until fork tender, stirring about half way to prevent sticking. Salt and pepper to taste.
