Cut butter into half pieces

Dissolve salt and sugar in water. chill.

In standing mixer, cut butter into flour with cold paddle, bout 45 seconds. As water all at once and run mixer at medium speed until dough comes together. Form dough into discs. Chill

Remove dough from fridge and roll out 1/8 inch thick.
