Cut Egg Plant to about 2 inch long sticks, not too thin and not too thick.

Add about 2 teaspoons of turmeric and the salt and mix well.

Deep fry in hot oil.

Once its fried and it turns a nice brown colur transfer to kitchen paper to drain oil.

Now in a pan add some oil and when hot add sliced onions. Once the onions have browned add the garlic and ginger and fry until brown.

Add the sugar and the egg plant.

Now add the green chillies and remove from fire once they are nice and green.

Take off heat and add vinegar and mix well.

This tastes delicious with steamed rice and maybe a good curried chicken.
