Ingredients

  • Halfcup leftover potato fries
  • 3eggs
  • Salt

Steps

  1. 1

    Separate the egg yolk from whites

  2. 2

    Beat the egg whites and set aside

  3. 3

    Heat up a pan and add the sweet potatoes

  4. 4

    Let the sweet potatoes warm up for about 2 minutes

  5. 5

    Add 2 teaspoons of cooking oil then the egg mixture

  6. 6

    Add the egg yolk at the top so that they cook together until they form a base

  7. 7

    Serve with your favorite sides
