Ingredients

  1. 1 poundground beef or ground turkey
  2. 1small onion, finely diced
  3. 2carrots, finely diced
  4. 2 stalkscelery, finely diced
  5. 1 candiced tomatoes, undrained
  6. 1 candark red kidney beans, drained and rinsed
  7. 1 cancannellini beans (or white kidney beans), drained and rinsed
  8. 1 (26 oz.)container beef stock (or 3 cups)
  9. 1 jar (25 oz.)spaghetti sauce
  10. 2 tsp.dried oregano
  11. 1 teaspoonground black pepper
  12. 2 teaspoonsdried parsley
  13. 3/4 cupuncooked ditalini pasta (see cook’s notes below)
  14. salt, to taste (about ½ tbsp. kosher salt)

Steps

  1. 1

    Brown and crumble ground beef.

  2. 2

    Drain excess grease.

  3. 3

    Add all the other ingredients to the slow cooker (except for pasta) and stir.

  4. 4

    Set slow cooker on low for 6-8 hours or on high for 4-5 hours

  5. 5

    During the last 30 minutes or so of cooking, add in the pasta and stir.
