Ingredients

  1. 1 lbextra lean ground beef
  2. 4bell peppers
  3. 1 canblack beans
  4. 3/4 cupshredded cheese
  5. to tasteSalt and pepper
  6. 1tomato, diced
  7. 2romain lettuce leaves, sliced thinly
  8. Sour cream
  9. 1.5 tbschili powder
  10. 1 tbssmoked paprika
  11. 1 tspcumin
  12. 1/2 tspcurry powder
  13. 1/4-1/3 cupwater

Steps

  1. 1

    Cut peppers in half, remove seeds and ribs and set aside (If you don't like your stuffed peppers with a crunch, And you like them softer, bake peppers with tad bit olive oil in 350°F oven for 15 min then continue with rest of the recipe)

  2. 2

    In a pan, brown your ground beef.

  3. 3

    While Browning beef, mix spices with the water until mostly dissolved. Add salt and pepper to taste

  4. 4

    Once meat is browned, add your "spiced water" to the beef and the can of black beans, bring to a bubble and let cook until most of water is evaporated.

  5. 5

    Once done, fill your pepper boats and top with cheese. Bake at 375°F until cheese is bubbly and melty.

  6. 6

    Top your pacos with more shredded cheese (If desired) and your sour cream, diced tomato and "shredded" lettuce.
