fry bacon in butter until crisp

add leeks and potatoes along with stock and season well

bring to the boil then cover and simmer for 15 mins

set aside half of bacon leek potato then puree the rest

return retained bacon mix and add milk

gently reheat add more milk if too thick

stir in parsley
