Cheesy Artichoke and Spinach Dip

Delicious! Sometimes I add ranch dressing instead of mayo. Or keep the mayo and add a bit of hidden valley ranch seasoning! :-)

1/2 cupChopped onion
1/2 cupChopped red sweet pepper
2 cloveGarlic, minced
1 tbspOlive oil
2 packages8-ounce reduced fat cream cheese (neufchatel), softened
1 1/2 cupFinely shredded parmesan or romano cheese
1/4 cupMilk
1/4 cupMayonnaise
1/4 cupLight dairy sour cream
4 cupChopped fresh spinach
14 ozcan Artichoke hearts, drained and chopped
1Bagel chips, corn tortillas, toasted baguette-style french bread slices, or toasted pita bread (cut into triangles)

Preheat oven to 350°F.

In a large skillet cook onion, sweet pepper, and garlic in hot oil over medium heat until tender, stirring often; set aside to let cool.

In a large bowl stir together cream cheese, parmesan cheese, milk, mayonnaise, and sour cream. Add onion mixture, spinach and chopped artichoke hearts; stir gently to combine.

Spread mixture into a deep 9-inch pie plate or a 1 1/2-quart baking dish.

Bake about 30 minutes or until bubbly. Serve with bagel chips, corn tortilla chips, toasted bread slices, or toasted pita bread triangles.
