Ingredients

  1. 50 gramsBreadcrumbs
  2. 3 lbBaking Potatoes
  3. 60 ozPancetta, diced
  4. 250 mlMilk
  5. 4 eachEggs
  6. 2 cloveGarlic
  7. 250 gramsParmesann Cheese, grated
  8. 3 ozGruyere Cheese, grated
  9. 5 ozMozzarella, diced

Cooking Instructions

    Heat oven to Gas Mark 5.

  2. 2

    Grease a shallow baking tray and coat with half the breadcrumbs.

  3. 3

    Simmer the potatoes whole for 30-40 minutes until soft, drain and set aside. add butter and allow to melt, mash potates and add milk mash until smooth.

    Fry pancetta until golden and add to mashed potato along with garlic, eggs, parmesan, gruyere and mozzerella

  5. 5

    Spoon potato mixture on to the baking tray and smooth the surface, top with remaining breadcrumbs and bake for 1hr 30 minutes.

    Alternatively make smaller cakes using the same principal using a burger maker.
