Melt coconut oil in large saucepan. ( you can skip it all together if you want)

add in oays, and stir to coat. Turn up heat and cook for a few minutes. Add water and salt and bring to a boil. Simmer for 5 minutes and remove from heat. Ladle oats and water (there is still quite a bit of water left over) into glass containers.

Cover with lids and let sit on counter overnight.. ( or about 8 hours)

In the morning I had enough for 4 servings to the sauce pan with a little bit of almond milk and heat it through.

Items to top it with fresh or dried fruit, nuts, honey, maple syrup, bananas, ground flaxseed, and unsweetened coconut flakes. Just about anything you would like in your oatmeal.
