Hassle back potatoes
New experiment, turned out really easy ;)
Steps

Soak and clean potatoes well, scratch off any dark bits

Boil the potatoes unpeeled, cool them down with cold water and lay out in a baking pan

Cut a few slits over the top to the middle and spice with salt and black pepper, place thin slices of cheddar cheese in the cuts. They tend to crack open but it's alright

Finely chop the parsley and peeled tomato and mix with garlic and olive oil. Add your favorite spices. Spread some of this super tasty mix over each potato

Bake for 20-30 minutes on low heat, 180 c.
