Heat oil & butter in large heavy based pan over a medium-high heat.

Add the onions & carrot, reduce heat and cook stiring for 5 minutes. Add the garlic & cook for further 1-2 minutes.

Pour in the cider and stir well to remove sticky bits from base of pan. Add the sausages and brown for 4-5 minutes.

Add the tomatoes. Cover with the stock and add thyme. Simme for 15 minutes until sausages are cooked.
