Combine bread crumbs, butter, cheese, paprika, garlic powder, 1/4 tsp salt and pepper in large bowl

Heat oven to 450°F

Slice 1/4 inch off the bottom of each potato to create a flat base. DO NOT PEEL POTATOES

Cut across each potato every 1/4 inch being VERY careful to NOT slice all the way through. Leave about 1/4 inch of potato unsliced at the bottom of each cut

Gently rinse potatoes under running water to remove all excess starch in cuts (VERY IMPORTANT)

After potatoes have drained, place sliced side down on microwaveable plate and nuke at high power until slightly soft, about 6-12 minutes. Flip half way through

Arrange potatoes sliced side up on foil lined baking sheet

Brush all over with olive oil, then season with salt and pepper
- 9
Bake until skin is crisp and potatoes are beginning to brown, about 25-30 minutes

Remove from oven and heat broiler
- 11
Carefully top with bread crumb mixture making sure to get some into slices

Broil until crumbs begin to get brown, about 3 minutes
