Cream butter/coconut oil with sugar until fluffy

Beat in the eggs one at a time

Stir in grated carrots and apple

In a separate dish, sift together both types of flour, cocoa, baking powder, and the pinch of salt.

Mix wet and dry ingredients together until incorporated (be careful not to overmix)

Bake in greased cupcake pan for 10-12 minutes at 350 degrees F

While the brownie cupcakes are baking, whip the cream and cut the tops off the strawberries

Once cool, top each cupcake with a strawberry and pipe whipped cream around the base.
