Ingredients

4 servings
  1. 1small red cabbage
  2. 5carrots (or any veggies on hand)
  3. 1onion
  4. 3 clovesgarlic
  5. Green curry paste
  6. to tasteGrated ginger
  7. 1 tablespoonpeanut butter
  8. 1 tablespoonsoy sauce
  9. 1 cupcoconut milk

Steps

  1. 1

    Fry onion and garlic until translucent

  2. 2

    Add chopped vegetables and fruits on high heat for 3-4 minutes

  3. 3

    Stir in the rest of the ingredients and cook for another 3 minutes or until vegetables reach the desired softness.

  4. 4

    Enjoy plain or serve with rice/chapati.
