dissolve the chopped coconut in 300ml boiling water

best oil in non stick saucepan... add chilli, ginger, chicken, and garlic and cook for 1-2mins.

add stock, coconut milk, lime juice and half of the coriander... bring to boil... cover and simmer for 15 min.. add mangertout and cook for a further 5min until chicken is tender... add remaining coriander and season to taste garish with spring onions and divide into 4 bowls and serve with plenty of crusty bread... and enjoy.
