Roasted Binagoongang Manok sa Gata

Combine bagoong, garlic, lemongrass, vinegar or calamansi juice, olive oil & onion. Mix well.

Marinate chicken in the mixture for at least 45 mins.

Place in a baking dish, pour coconut cream over the chicken, & cover with foil.

Bake in preheated 300°F for 2-1/2 hours.

Remove foil and adjust temperature to 350°F and bake for another 15 mins or until the top is golden in color.

Serve immediately.
