3 can(14oz) low-sodium chicken broth
1 tbspdry sherry
1 piecefresh ginger, peeled & sliced thinly
1 lbboneless, skinless chicken breast (cut into 1/2" chunks)
1 cupfresh mushrooms, sliced
1 1/2 cupcooked brown rice
1/3 cupshelled edamame
2 tbsplow-sodium soy sauce
1 tspsesame oil
3scallions, thinly sliced

In pot, combine broth, sherry and ginger. Over high heat, bring to boil. Reduce heat; simmer 15min. Remove ginger.

Add chicken & mushroom; simmer 5min.

Add rice, edamame, soy & sesame oil; heat through about 3min. Sprinkle with scallions & serve.
