Preheat skillet to Medium heat.

Cut fish in half, parallel to spine.

Remove skin with razor blade or filet knife. The skin will cause the meat to become softer and buttery during cooking. Avoid leaving the skin on if you like a more firm texture. Remove the skin and cut into small portions to fry.

Cook for approx 8-10 minutes on each side, or longer, until desired firmness.
