Ingredients

1 1/2 cupoil
2 cupsugar
3 largeeggs
2 cupgrated carrots
8 1/2 ozcanned crushed pineapple, drained
2 1/2 cupflour
1 cupchopped nuts
2 tspbaking soda
1/2 tspsalt
1 tspground cinnamon
1/2 tspalmond extract

preheat oven to 350°

cream oil, sugar and eggs well.

add carrots and pineapple. mix well.

sift together the flour, salt, baking soda and cinnamon.

add flour mix to you're creamed mixture.

add nuts and almond extract. beat well.

pour mix into a greased bunt pan.

bake for 50-60 min. let cool..

frost cake with carrot cake frosting recipe..

makes 1 cake
