Preheat oven to 350. Spray 9x13 baking dish with vegetable spray and set aside.

Add enough cold water to cover potato in large pot.

Bring water to boil and cook about 40 minutes

Drain and mash should be about 10 cups.

Add pineapple, sugar, butter, cinnamon, allspice, and nutmeg and beat until well combined with mixer.

Beat in eggs one at a time.

Pour into prepared baking dish

Mix together all topping ingredients and Sprinkle on potato mixture.

Bake 30 to 40 minutes until golden brown and bubbly.
