Preheat oven to 375dgs.

Melt 4 sticks of butter in a small saucepan.

Fry onions in butter until translucent (approx 8 mins) then add minced garlic for 2 more mins. Remove from heat.

In a large bowl combine crackers with melted butter

Add all the chopped seafood then fold in 8oz of the cheese.

Lay the lobsters on thier backs. split the lobsters lengthwise from head to the end of the tail. BE BRAVE

With your 2 hands, pry the bodies open and remove all the foreign matter from the body cavity as well as the vein running down the tail. Leave any excess liquid inside.

Grab a handfull of stuffing and fill each body cavity and tail section. Be generous.

Arrange lobsters 2 to a cookie sheet head to tail and cover with foil. Make sure that claws are covered with foil.

Bake for 15 mins. Remove from oven, remove foil and sprinkle 2oz over the stuffing of each lobster.

Bake an additional 10 mins uncoverded until cheese is melted.

Serve with a small bowl of melted clarified butter.
