Ingredients

30 mins
  1. Rub
  2. 1 tspKosher Salt
  3. 1 tspCoarse Black Pepper
  4. 1/2 tspDried Thyme
  5. 6 cloveGarlic

Steps

  1. 1

    Combine ingredients for Rub and set aside

  2. 2

    Rinse and pat dry roast. Rub seasonings all over roast and let sit for 30 min on counter

  3. 3

    Preheat ocen for 500°F

  4. 4

    Place roast in Dutch Oven or Roasting Pan fatty side up. Roast at 500 for 7 min per lb

  5. 5

    Turn off oven let sit for 2.5 hrs - do not open the oven door

  6. 6

    Take out and check temp, should be between130-150 if not put back in oven at 325 and check every 10min

  7. 7

    Put finished roast on a plate cover with tin foil and let rest for 10 min
