Combine all ingredients, except meat, in a large pot & bring to a simmer, stirring to dissolve the salt & sugar.

Allow brine mix to cool to room temperature. Then place brine in the fridge and allow to cool completely.

When brine is cooled, submerge meat in brine and place in the fridge for the Brine Time specified below.

Remove meat from brine, pat meat dry with paper towels, and place meat in the fridge uncovered for up to 24 hours. Discard brine.
