Preheat oven to 325

Line baking sheets with parchment paper.

Combine flaked coconut, condensed milk and vanilla extract in large bowl.

Using a an electric mixer, beat egg whites for 1 minute.

Fold 1/3 egg whites into coconut mixture to lighten, then fold in remaining egg whites.

Use a tablespoon and place mixture on baking sheet about 2 inches apart.

Bake for about 25 minutes or until golden brown.
