Finely chop the onion, garlic, and shallot. Sauté in butter.

Once the onion is translucent, set aside.

Boil the tomatoes, guajillo chiles, and chile de árbol in water.

Once cooked, blend them together with salt and pepper. Taste for spiciness; add more chile de árbol if you want it hotter.

Blend the sautéed onion mixture with the tomato and chile sauce.

Bring the sauce to a boil for 5 minutes. Taste and adjust salt as needed.

Add the shrimp.

Simmer for 10-15 minutes over medium heat.

Serve as shrimp sandwiches (pepitos) or with a side of white rice.
