Baked breadcrumb tomatoes on garlic parmesan spaghettini.

Steps

Halve the cherry tomatoes, toss with olive oil and breadcrumbs.

Place on oil-coated aluminum foil on a cooking sheet.

Place in an oven heated at 350°F for 20-25 mins until the breadcrumbs crisp.

While tomatoes bake, boil spaghettini, enough to serve two.

In a large sauce pan heat oil on medium-low heat. Add garlic and heat for a minute.

Toss in spaghettini, mix with garlic-oil sauce.
- 7
Toss in the baked tomatoes and grate generous amount of fresh parmesan.

Add salt and pepper if desired.
