Ingredients

  1. 3 lblarge shrimp, unpeeled
  2. 3 quartwater
  3. 1 cup3" julienne cut yellow bell pepper
  4. 1 cupthinly sliced fennel bulb
  5. 2/3 cupthinly sliced shallots
  6. 3garlic cloves, thinly sliced
  7. 1 tspgrated lemon rind
  8. 1/2 cupfresh lemon juice
  9. 1 tspkosher salt
  10. 1 tspmustard seeds
  11. 1 tspfennel seeds
  12. 1/2 tspsugar
  13. 1/2 tspcrushed red pepper
  14. 1/3 cupextra virgin olive oil
  15. 4bay leaves

Steps

  1. 1

    Peel and devein shrimp, leaving tails intact; discard the shells.

  2. 2

    Bring 3 Qts water to a boil in a dutch oven. Add shrimp; cook 3 minutes or just until shrimp turn pink. Drain and rinse with cold water; drain. Place shrimp in a largebowl. Add bell pepper, fennel, shallots and garlic; toss to combine.

    Combinerind and next 6 ingredients (through pepper) in a medium bowl; stirring with a whisk. Gradually add oil, stirring constantly with a risk. Stir in bay leaves.

  4. 4

    Combine oil mixture and shrimp mixture in a largezip lock bag, toss well to coat. Seal and marinate in refridgerator at least 8 hours or up to 24 hours, turning bag occasionally. Discard bay leaves.

  5. 5

    Hands on time: 40 minutes Total time: 8 hours 43 minutes
