heat cast iron skillet on medium heat, you want to sear the chicken to keep it juicy inside while blackening.

cut chicken into strips

add chicken to hot pan, if your pan is well seasoned you don't need oil, chicken will stick a little just scrape as you go

add each of the seasonings, you want the chicken very covered with seasonings, add more to taste

when chicken is no longer pink and is firm to the touch, you may place in a warm oven to hold until you are ready to serve. At this point chicken should have a lovely dark crust of seasonings.

I either serve this over dirty rice with Italian green beans, black eyed peas and beignets. It works really well on Fettucini Alfredo too.
