
Prosciutto gnocchi with sage butter

preheat oven to 220ºC
- 2
cut potatoes in half and bake for 40-60 minutes or until insides are soft.

allow potatoes to cool, peel and mash
- 4
mix in egg yolks and parmesan cheese, add a pinch of salt and pepper
- 5
place potato dough on a floured surface and gradually add the flour, untilbdough is no longer sticky

divide dough into fist-sized pieces, roll into sausage shapes about 15cm long
- 7
flatten dough pieces and lay strips of prosciutto along the middle, then foldbdough over prosciutto and roll
- 8
repeat with all the dough and then cut each strip into pieces about 2cm
- 9
boil a large pot of water, cook gnocchi, scooping it out when it rises to the top of the water
- 10
melt butter over a medium-heat in a large frying pan, add sage leaves and fry until crispy. toss cooked gnocchi through hot butter and serve.
