In large skillet, stir fry beef in oil until no longer pink.

Stir in soup, water, onion soup mix and mushrooms.

Reduce heat; cover and simmer for 20 minutes.

Meanwhile, boil egg noodles in large pot for as long indicated on package and drain when done, return to pot.

after 20 minutes of simmering, stir in sour cream.

Heat through (do Not boil)

Serve over noodles.

Garnish with Parsley, if desired.
