Ingredients

  • 1 lbFresh crab meat (lump blue crab)
  • 1Light vegetable oil cooking spray
  • 1 tspFreshly grated Parmesan cheese
  • 1 tbspSnipped fresh chives
  • 1 largea whole egg or 2 egg whites, beaten
  • 1 tbspOld Bay seasoning
  • 1 tspItalian seasoning
  • 2 tbspchopped jalapeno pepper (1 large pepper)
  • 1 tspbaking powder
  • 2 tbspChopped fresh parsley
  • 1 tspWorcestershire sauce
  • 1 cupunflavored dried bread crumbs

Steps

  1. 1

    Preheat oven to 400°F

  2. 2

    Rinse crab meat under cold running water and drain, making sure to remove any filament or shell.

  3. 3

    Spray the vegetable oil over the baking sheet 3 times to coat

  4. 4

    In a large bowl combine all remaining ingredients except 1/2 cup of breadcrumbs and stir in the crab meat

  5. 5

    Using 1/4 cup for each crab cake form the mixture into 8 cakes

  6. 6

    Roll each in the reserved breadcrumbs and place on the prepared baking sheet

  7. 7

    Coat the crab cakes lightly with the cooking spray

  8. 8

    Place the baking sheet on the bottom shelf of the oven and bake the crab cakes for about 5 minutes per side until Brown
