A few of my favorite toppings are chopped walnuts, sprinkles, cocoa & sea salt. Enjoy!
Steps

Take honey and place in small sauce pan over medium heat. Bring to a frothy boil until brown and caramelized

Combine chocolate chips in double boiler (or a glass/metal bowl over a pan of water on the stove) until melted. Add butter, stir until melted and incorporated.

Remove from heat and add honey caramel and rum or rum extract. Let cool while you sift the powdered sugar.

Add powdered sugar a little at a time until sugar is absorbed and mixture comes together.

Take about a half tablespoon of chocolate mixture and roll into a ball. Roll ball in mixture of your choice.

Place balls on wax paper covered cookie sheet and place in fridge for about 30 minutes or until set. Bring to room temp and enjoy!
