for the dough, mix the sugar and yeast with warm water and set aside for 10 minutes. Meanwhile, stiff the flour and the salt in a big bowl or a flat surface (for the flour you can mix wholegrain with white or any other variety). Make a hole in the middle and add the foamy yeast in the middle of the flour and the oil.

Integrate the flour little by little with a spoon. when no longer applicable, use your hands to mix it through.you can add warm water and flour if needed . continue working on the dough till you have a soft dough.place it in an oiled bowl. Cover it with a towel and keep it in a warm place for about 90 minutes or until it doubles in size.

for the filling, crumble the feta and add all the other ingredients to it.mix well and refrigerate. (you can choose any cheese combination like ricotta with mozzarella...)

when the dough is ready, by working on small portions, fold it on a floured surface.now according to what you like, a thick or thin crust.

use a cup or a cookie cutter to cut them into circles. fill each with a teaspoon of the cheese filling on one side and fold the other side on top . squeeze the sides with a fork or by hand.

bake them on a baking pan in a warm oven for around 10-15 min on a medium gas mark.

if the filling ends and you still have dough, you can make pizza with it or u can stuff it with anything you want.
