1 cuppowder sugar
2 tsplemon juice
1 tspgrated lemon rind
16 ozcream cheese- softened
3 lbfresh strawberry

remove leaves and slice 2 pounds of strawberries. mash until small chunks remain.

add mashed strawberries, cornstarch and granulated sugar to medium sauce pan and bring to boil over medium high heat, stirring constantly until thickened. cook 1 minute and remove from heat. add vanilla, let cool.

while strawberry mash cools, beat cream cheese, powder sugar, lemon juice, and lemon rind until smooth. divide cream cheese mixture between pie plates and spread evenly.

remove leaves and half remaining 1 pound of strawberries. place halves cut side down into cream cheese covering entire pie. pour cooled strawberry mash on top spreading evenly on each pie and cool at least 4 hours before serving.
