Ingredients

  1. 3 largeeggs
  2. 2 lbasparagus, trimmed
  3. 1lemon
  4. 2 tbspred wine vinegar
  5. 3 tbspextra virgin olive oil
  6. 1 tbspsnipped chives
  7. 1/4 tspsugar

Cooking Instructions

    Hard boil and cool eggs.

    Cook asparagus

  3. 3

    Grate lemon peel in small bowl

  4. 4

    Mix 1 Tblsp lemon juice, oil, vinegar, chives, sugar - salt & pepper to taste

  5. 5

    Whisk to combine

  6. 6

    Arrange asparagus on serving platter. Drizzle with vinaigrette.

  7. 7

    Sprinkle finely chopped eggs over all and serve.
